Buffalo Cauliflower Bites

These cauliflower bites are the best I’ve had and that is saying a lot because there are some amazing restaurants in St. Louis that serve really great cauliflower bites. They are best served immediately, but I just threw them in the oven once we arrived at our destinations. I overheard someone saying that they actually taste like chicken. I don’t know about that, but they are damn good. I hope you enjoy!

Buffalo Cauliflower Bites

  • 1 head Cauliflower (bite size pieces)

Dry Ingredients

  • 1.5 Cups Gluten Free or regular flour
  • 1 tsp Garlic Powder
  • 1/2 tsp Pepper
  • 1/2 tsp Paprika
  • 1/2 tsp Onion Powder
  • 1/4 tsp Poultry Seasoning (optional)
  • 1/4 tsp Salt
  • 1/4 tsp Oregano

Wet Ingredients

  • 3/4 Cups Unsweetened Almond Milk
  • 1.5 tsp Apple Cider Vinegar
  • 1.5 tsp Ground Flax
  • 1/4 Cup Beer
  • 2/3 Cup GF Flour
  • 1/2 tsp Salt
  • 2-4 Cups Canola Oil
  1. In a large bowl combine Almond Milk, Beer, Flax and Apple Cider vinegar and set aside.

  2. Combine all dry ingredients in a large bowl

  3. Pour Canola oil in large pan and turn on medium-high heat

  4. Add 1 1/2 cup of flour and salt to almond milk mixture. Stir. Mixture should be a little thinner than pancake mix. Add more liquid (beer, plant milk or water) to mixture to thin, add more flour to thicken.

  5. Cut Cauliflower into bite sized pieces.

  6. Coat Cauliflower in wet mixture, then coat in flour. Repeat if you'd like a thicker breading. Drop in oil and cook until golden brown. You may have to flip if all of the cauliflower is not covered.
